Yoghurt Cake

A very moist cake with a citrus twist that is suitable for Diary Free, Fodmap and Gluten Free diets.



The idea for this delicious yoghurt cake originated with my aunt Joan, from whose recipe I have developed a version that can be enjoyed by several ‘free from’ diets.

It was originally a butter cake, tasty but not light. I have replaced the butter with coconut oil and the citrus flavour has been intensified with the addition of fresh lemon rind. Wheat flour is replaced by a combination of rice and potato flours – I like to blend my own flours changing the mix and balance for different cakes and biscuits. Substituting a commercial Gluten Free flour mix, in the same quantity, will also make a tasty cake.

Diets for which Yoghurt Cake is suitable:

Dairy Free, Fodmap, Gluten Free, Nut Free and Vegetarian.

Ingredients

Preparation: 15 mins | Cooking: 40 mins | Serves: 8

120 gm coconut oil*
150 gm (3/4 cup) castor sugar
1 lemon, rind
1 cup yoghurt (Dairy Free and Fodmap see notes)**
2 eggs, separated
60 gm (1/3 cup) mixed peel, chopped
150 gm (1 cup) rice flour***
50 gm (1/3 cup) potato flour***
3 tsp baking powder (Gluten Free see notes)****


Method

PREHEAT oven 170 C/325 F/Gas 3.
LINE the bottom of a 18cm (7 inch) cake tin or 23 x 12cm (9×5 inch) loaf tin with baking paper.
GREASE the baking paper and the sides of the tin.
CREAM the coconut oil and sugar (the coconut oil will need to be room temperature).
MIX in the egg yolks, yoghurt, mixed peel and lemon rind.
SIFT the flours and baking powder.
FOLD flours into the cake mix.
BEAT the egg whites to soft peaks.
FOLD half the egg white through the cake mix then add the balance (the mix remains quite firm).
SPOON into the cake/loaf tin and bake for 35-45 minutes. (The cake should be firm when gently touched. Do not over-cook as it dries quickly)
COOL 10 mins in the tin before turning out.

Serve

– Snack or dessert served with fruit, particularly good with orange.

Notes

* Substitute with butter (not Dairy Free).
** For Fodmap diets select a low lactose yoghurt and select soya yoghurt for Dairy Free.
*** Substitute with a commercial Gluten Free flour mix.
**** Gluten Free diet select Gluten Free baking powder.
