BrowsersGrazers demonstrates how simply you can cater for special diets.

I am a trained dietitian/nutritionist and bring these skills, in combination with catering experience, to the tourism and hospitality industry of Zambia and the region. I can help you cater for the increasing demands for special diets, either through choice or because of food allergies.

BrowsersGrazers offers a range of training, demonstration and practice packages to assist managers, chefs and front-of-house staff to cater to this demand. They include:

  • Safety issues around diet meals (nb: allergies can kill), with particular attention to Dairy Free, Egg Free, Gluten Free and Nut Free diets;
  • Guidelines for communicating with clients to understand fully their particular dietary requirements;
  • Food/Nutrition, Cooking, ‘Dos and Do Nots’ of particular diets; Dairy Free, Gluten Free and Vegan to name a few.
  • Healthy Cooking – salt, fat and sugar;
  • Sourcing the necessary ingredients, using local and seasonal foods where possible;
  • Food Labelling – understanding food labels (nb: essential when catering for special diets);
  • Working with the chef to be creative in adapting and substituting within the ‘standard’ menu;
  • Adding new recipes from the browsersgrazers online recipe list to meet dietary requirements;
  • How to use as a nutrition and recipe resource;
  • Provision of ‘aide memoire’ hand-outs of key points to all tutees.
