Watermelon Zester

A refreshing drink for those hot summer days, especially suitable for Diabetic, Low Calorie and Raw diets.

Watermelon is a great thirst quencher, sweet without adding sugar (hence the suitability for Diabetic and Low Calorie diets). The lime – the ‘zester’ – is a tasty addition, reducing the intensity of the sweetness.

Best served chilled.

Preparation: 10 mins | Serves: 4 cups

1 small watermelon
4 limes, juiced
4 sprigs mint


CUT the watermelon into chunks.
REMOVE the rind and seeds.
BLEND the melon using a hand mixer or juicer.
JUICE the limes.
ADD lime juice to watermelon and check the flavour. (You may need more juice if the melon is sweet.)
CHILL before serving.


– Add ice cubes and sprig of mint.
– Add soda water for a lighter drink with a bit of sparkle that remains Low Calorie- and Diabetic-friendly.
