Watermelon and Feta Salad

A refreshing watermelon salad for Gluten Free and Vegetarian diets.



The sweet watermelon and salty feta are a tasty combination, enhanced with the mint or basil.

I first encountered this dish a few years ago in a restaurant in Lusaka, Zambia. I ordered it as a starter but was so satisfied by it that it became my complete lunch. It has since become a familiar dish in our household; and I have seen variations on several restaurant menus, often including cucumber, cashew and red onion.

The quantities below are a guide only.

Diets for which Watermelon and Feta Salad is suitable:

Diabetic, Gluten Free, Low Calorie, Low Fat, Nut Free and Vegetarian.

Ingredients

Preparation: 10 mins |Serves: 2 (as a light meal)

1/2 watermelon, medium-size
4 tomatoes
1/2 bunch basil or mint
100 gm (1 cup) feta*
1/2 tsp cracked black pepper
1 tbsp olive oil
1tbsp lemon juice

Method

CUT the watermelon into slices approx 2.5cm (1 inch) thick.
REMOVE the seeds and the rind and cut into cubes.
CUT tomatoes into cubes.
CUT or crumble the feta.
TEAR the mint/basil leaves.
MIX in the serving bowl.
POUR over the oil and lemon juice.
ADD pepper to taste.

Serve

– Starter, light meal or salad to accompany a main course dish.

Notes

* Add cucumber, cashew nuts and red onion (slice and soak for 30 mins).
