Tropical Fruit Salad

A fruit salad with subtle undertones of lime and vanilla, to be enjoyed by most diets including Diabetic, Dairy Free and Low Calorie.

Credit for this recipe goes to Solomon, the chef at Bale Mountain Lodge in Ethiopia, where Alastair and I stayed and ate delicious food while searching for (and finding) the Ethiopian wolf and some great birds.

Vanilla is an interesting addition, a natural flavouring that balances all the fruit flavours. Its sweetness counters any need for sugar and, therefore, makes the salad suitable for Diabetic and Low Calorie diets.

I have made this with numerous combinations of fruits and found them all delicious. For a Fodmap diet the tropical fruits, mango, nashi (or Asian) pear, pomegranate and watermelon are not suitable.

Diets for which Tropical Fruit Salad is suitable:

Diabetic, Dairy Free, Fodmap, Gluten Free, Low Calorie, Low Fat, Nut Free, Paleo, Raw, Vegan and Vegetarian.

Preparation: 10 mins | Serves: 2

1/2 pawpaw*
3 pineapple slices
1 banana
1 passion fruit
1 tsp vanilla essence
1 lime, juiced

PEEL the pawpaw, pineapple and banana.
CUT into bite sized pieces.
MIX the fruit with the lime juice and vanilla.
STAND for 15 to 30 minutes for the flavours to combine. (I would not recommend longer as many fruits brown or soften.)

– Add ice cream (soya ice cream for Dairy Free, Raw and Vegan diets. For Fodmap, Low Calorie, Low Fat and Paleo diets sorbet is suitable), coconut cream (for Fodmap, Paleo and Raw diets) or yoghurt flavoured with vanilla (soya yoghurt for Dairy Free, Raw and Vegan diets. Coconut yoghurt for Fodmap and Paleo diets.)

* Select fruit according to colour and seasonality and consider fruit choice for Fodmap diets.
