A spicy variation on potato salad, inspired with Indian flavours, to accompany a meal.
I am very keen on Indian food, a fondness which has grown during my years living in London where many of the ‘curry houses’ are of exceptionally high quality. I am therefore including many variations on Indian recipes on this site.
This recipe, like most, uses a minimal quantity of oil and, while spicy and full of flavour, is not ‘hot’. If you are wanting more ‘heat’ add more cayenne pepper or a chilli.
Spiced Potato and Peas is delicious served hot; or allow the flavours to develop and serve it cold as part of a salad selection. Try it as an accompaniment to:Tandoori Fish; a simple grill; or a green salad and a salsa.

Ingredients
Preparation: 10 mins | Cook: 40 mins | Serves: 4
500 gm new potatoes
1 tbsp oil
1 tbsp finely chopped ginger
2 garlic cloves, crushed
1 onion, finely chopped
1 tsp turmeric
1 1/2 tsp ground cumin
1/4 cayenne pepper*
4 (1/2 can, 200 gm) tomatoes
150 gm (1 cup) peas, fresh or frozen
1/2 cup water
1/4 cup chopped coriander
Method
STEAM the potatoes for about 20 minutes until tender.
HEAT the oil to a medium temperature in a deep frying pan or heavy based saucepan.
ADD the onion, garlic and ginger and sauté for about 5 minutes until softened.
ADD the turmeric, cumin, cayenne and potatoes and cook for about 5 minutes, stirring regularly to prevent sticking to the pan.
ADD the tomato and cook for a further 5 minutes, again stirring regularly.
ADD the peas and water and cook for about 5 minutes until thickened. (Do not over-cook or the peas will loose their vibrant green colour.)
STIR through the coriander. (If serving cold add the coriander later, immediately before serving.)
Serve
– As a vegan meal withrice, soyayoghurt and perhaps a number of other spicy dishes, eg Ethiopian Greens, and chutneys, egMango Salsa.
– Good with a curry or a grill.
Notes
* Adjust the cayenne to your taste. This quantity gives a medium heat.
