Slice, Dice and Chop

Here in Zambia, it is the end of winter. It is warm (except in the early morning) and pretty much insect-free. Ideal for growing most vegetables (provided one has ready access to water as it is also the dry season).


With the aid of ‘just right’ sunshine, plenty of water (we live right by the Mighty Zambezi) and lots of mulching (the village cows do have their benefits), my vegetable garden continues to develop and grow. The tomatoes are abundant and I have a good supply of eggplants, peppers, beetroot, carrots, mustard spinach, chard, rocket, sorrel, radicchio lettuce, radish, onions and chillies, as well as a range of herbs that includes basil, dill, coriander, rosemary and mint.

It is this variety of ingredients, and their preparation in a variety of ways, that keeps healthy cooking alive and interesting. While it is the visual appearance that is the first step to entice the eater, the way you prepare your vegetables can provide more. This is explained at greater length in the link below as follows:
