Roasted Tomatoes

Roasted tomatoes for many occasions and most diets.


Ripe, seasonal, tiny tomatoes are sweet bites. Roast with some fresh herbs to provide complementing flavours.

Diets for which Roasted Tomatoes are suitable:

Diabetic, Dairy Free, Fodmap, Gluten Free, Low Calorie, Low Fat, Nut Free, Paleo, Vegan and Vegetarian.

Ingredients

Preparation: 5 mins | Cooking: 20+ mins | Serves: 1 cup (approx)

30 (1 punnet)small tomatoes
1/2 tbsp olive oil
3 sprigs thyme*
1/4 tsp salt
1/2 tsp cracked pepper


Method

PREHEAT the oven to 180 C/350 F/Gas 4.
MIX tomatoes, oil and thyme in a baking dish.
ROAST until the skins start to burst, approximately 15 minutes. (Toss the tomatoes after 10 minutes.)
COOL and add salt and pepper before serving.

Serve

– A salad to accompany a meze platter or a selection of salads.

Note

* Basil or oregano can be used.
