Roasted Barley

Roasted Barley, with its toasted flavour and a nutty texture, is a great snack and suitable for Diabetic, Low Calorie and Low Fat diets.



Barley is an ancient grain that not so widely used today. It is a substantial addition to soups and makes a delicious replacement for rice in a vegetable risotto.

I was introduced to roasted barley when travelling in Ethiopia last year. In the more mountainous regions, where barley is grown, it is sold on the roadside in small measures. It makes a great snack, one that I have quickly adopted.

Try it as an alternative to ‘beer nuts’; it may become your new favourite healthy snack. It is a low calorie and low fat alternative to most of fast food we munch on.

Dairy Free, Diabetic, Egg Free, Low Calorie, Low Fat, Nut Free, Vegetarian and Vegan.

Ingredients

Preparation: 0 mins | Cook: 20-30 mins | Serves: 1 cup

1 cup barley*

Method

COVER the base of a thick frying pan with barley. (Do not over-fill because the barley will not roast evenly.)
COOK over a low to medium heat for 20-30 minutes, stirring regularly. (The barley will brown slowly and produce a toasting fragrance. Continue stirring and cooking until evenly coloured.)
COOL and store in an airtight container.

Serve

– As a snack.
– To accompany beer.

Notes

* The lower the roasting temperature the more evenly the grains will be cooked.
