Peaches with Feta

A fruit-based starter; or a light lunch for Diabetic, Gluten Free, Low Calorie and Vegetarian diets.

This dish provides a delicious mix of summer flavours – fragrant peaches and basil with salty feta cheese mixed with a grain to bind the contrasting textures. I have selected giant couscous (not suitable for GF diet), other examples you may choose are; quinoa, millet, bulghur or rice to name a few.

Diets for which Peaches with Feta is suitable:

Diabetic, Gluten Free, Low Calorie, Low Fat, Nut Free and Vegetarian.


Preparation: 10 mins mins | Cooking: 5 mins | Serves: 4-8

150 ml (2 cups) water
90 gm (1/2 cup) grain ( Gluten Free see notes)*
1/8 tsp salt
4 peaches, large and ripe**
90 gm (3 oz) feta cheese
2 tbsp basil leaves, roughly chopped
2 tbsp chives, chopped
1/2 tsp paprika
2 tbsp pistachio nuts (Nut Free see notes)***


BOIL the water and add the grain and salt.
COOK for the appropriate time (giant couscous, 7 minutes)
DRAIN and cool.
HEAT the grill to medium to high temperature.

CUT the peaches in half and remove the stone.
GRILL the peaches, cut side up. (They require only 3-5 minutes to brown. If overcooked they will be soft and not visually appealing.)
CRUMBLE the feta and mix with the cooked grain, basil, 1 tbsp chives, pistachio (not NF) and 1/4 tsp paprika.
SCOOP some of the peach flesh from the centre if you want to add a large quantity of the feta mix.****
FILL the peaches and top with the remaining chives and paprika.


– Chilled or at room temperature.


* Fodmap and Gluten Free diets select suitable grain, eg quinoa, millet or rice.
** Substitute with nectarines.
*** Nut Free diet select pumpkin or sunflower seeds. For others walnuts or almonds also good
**** Unused feta mix is a good salad.
