Papaya Sorbet

Papaya (or Paw Paw) Sorbet, a tasty ice, is simply made without the need of ice cream maker. It is suitable for many diets including Dairy Free, Gluten Free and Raw.

When there is an abundance of fruit I prepare and cook it in a variety of ways to maximise my enjoyment. Papaya I add to bothTropical Fruit Salad and savouryPapaya Salad; and I make this delicious sorbet.

Freezing fruits reduces their sweetness; so, the addition of a syrup is necessary to retain both the sweetness and many of the flavour qualities. In this recipe, the lime juice also enhances the flavours and ensures the added sugar does no result in a ‘sickly-sweet’ ice.

The sorbet is refreshing in a cone for a snack or as a light dessert. Try it with citrus flavours or passionfruit (granadilla) spooned over as a sauce.

Dairy Free, Gluten Free, Low Calorie, Low Fat, Nut Free, Paleo, Raw and Vegetarian.


Preparation: 10 + 5 mins | Cook: 5 mins | Serves: 8+
100 gm (1/2 cup) caster sugar (Raw diet see notes)*
250 ml (1 cup) water
1/2 (about 800g) large papaya
60 ml (1/4 cup) fresh lime juice**
1 egg white


HEAT the sugar and water over a low heat until the sugar is dissolved.*
COOL the syrup as you prepare the papaya.
PEEL and de-seed the papaya.
CUT into medium-sized pieces.
PURÉE the papaya in a food processor until it is smooth.
COMBINE the papaya, cooled syrup and lime juice.
POUR into a flat metal tin.
FREEZE the mixture until it is almost set, about 4 hours.
BREAK up the papaya sorbet with a metal spoon.
BLEND in the food processor with the egg white until the texture is even.
SPOON the mixture into a container. If you are to scoop the sorbet choose a small deep-sided one.
FREEZE for a minimum of 4 hours.
REMOVE from the freezer 5 minutes before serving to soften slightly.

* For a Raw diet replace the sugar solution with a solution of maple syrup and water; no heating will be required.
** Lemon juice can substitute lime juice.
