Marmalade d’Oignon Rouge

This red onion marmalade makes a tasty canapé for Diabetic, Low Calorie, Low Fat and Vegetarian diets or an addition to any grill.

This dish very simply utilises the texture and sweetness of red onions. They are cooked slowly, not browned, and then caramelized with the addition of balsamic vinegar and a little brown sugar. The small quantity of sugar, less than 1 gm sugar per serve, is so small it makes this dish suitable for any diabetic diet. Served with creamy ricotta, lower in fat than cream cheese, it makes a delicious canapé. Try it as a chutney with a cold platter and it will transform any cheese sandwich.

Dairy Free, Diabetic, Gluten Free, Low Calorie, Low Fat, Nut Free, Vegan and Vegetarian.


Preparation: 15 mins | Cooking: 45 mins | Serves: 30 (approx)

3 red onions, medium
1 tbsp olive oil
1 tbsp balsamic vinegar (or lemon juice)
1 tbsp brown sugar

For canapé:
150gm ricotta cheese or tofu spread *
30 dry biscuits or crotini**


PEEL and cut onions in 1/2 and finely slice.
HEAT olive oil over a low heat, add the onions and cook, stirring to ensure they do not brown. This will be approximately 20 mins.
ADD the vinegar and sugar.
COOK until most of the liquid evaporates. It will become firmer as it cools.


– Spoon 1 tsp ricotta on biscuit and top with 1/2 tsp onion mix.
– Cook onion in advance, plating up no more than 1 hour in advance so biscuits remain crisp
– Store refrigerated for 7 days


* For Dairy Free or Vegan diets serve red onion on tofu spread or try served onvegetables sticks.
** Gluten Free bread or biscuits for Gluten Free diet.
