Green Lentils with Turmeric

A gently spiced dish of green lentils that can be incorporated into meals in variety of ways. It is suitable for many diets including Diabetic, Gluten Free, Nut Free and Vegan.



The origins of this dish, known as Misir Alicha, is Ethiopia where it accompanies other bean and vegetable dishes (egShiro Wat,Carrot and Potato andEthiopian Greens) and is served withInjera (a type of pancake made with teff flour which is Gluten Free).

Along with the combined flavours of onion, garlic and ginger, turmeric dominants, providing a pungent aroma in cooking and an earthy flavour to the outcome.

I have enjoyed this dish with grilled fish. And I have served it as a salad in numerous tasty combinations – try it with a mix of green leaves, goats cheese, orange, beetroot, celery and radish.

Ingredients

Preparation: 10 mins | Cooking: 45 mins | Serves: 3-4 cups

200 gm (1 cup) green lentils, washed
1 tbsp vegetable oil
1 onions, finely chopped
2 garlic cloves, chopped
1 tbsp ginger, finely chopped
1 tsp turmeric
750 ml (3 cups) water
1/2 tsp salt, to taste
1/2 tsp cracked black pepper, to taste

Garnish (optional)
green chilli, thinly sliced
red pepper, finely chopped

Method

COOK the lentils in water. (No need to measure the water in this step, just cover the lentils.)
BOIL for 5 minutes then drain off the water.
HEAT the oil in a saucepan to a medium to high temperature.
COOK the onions for 5 minutes, stirring regularly.
ADD the garlic, ginger and turmeric and cook for 2 minutes.
ADD the lentils and 750 ml water.
BOIL, then reduce the heat and simmer.
COOK for approximately 30 minutes until the lentils have softened, adding more water if required. (For softer lentils of a thick stew consistency more water and time are required; for a firmer lentil for salad, check the texture after 20 minutes. Ideally you want the water to have evaporated completely, leaving the correct lentil texture)
TASTE, adding salt or pepper as desired.

Serve

– One of a selection of dishes; vegetables, legumes,rice,injera and roti
– Tasty salad.
