Fruit and Almond Log

This dried fruit and nut log is very versatile, being suitable as a packed snack or part of a dinner party menu.

It is very quick to prepare and, in an airtight container, will keep for weeks. (Keep it in the refrigerator to help it retain its moisture and for ease when slicing.) This makes it perfect as a high energy snack to have on hand for active friends and family members.

Fruit and Almond LogBeing intensely sweet, it also makes a healthy sweet treat with your coffee; is a good alternative to quince cheese on a fruit and cheese platter; and can be packed and presented as an attractive gift.

The combination of fruit and nuts are recommendations only; use your favourites or ingredients you have on hand.

Diets for which Fruit and Almond Log is suitable:

Diabetic, Dairy Free, Egg Free, Gluten Free, Low Fat, Paleo, Raw, Vegetarian and Vegan.


Preparation: 10 mins | Cook: 10 mins | Serves: variable
120 gm (2/3 cup) chopped dried figs*
120 gm (2/3 cup) chopped dates
150 gm (1 cup) almonds*
1 lemon, zested


ROAST the almond for approx. 10 minutes at a moderate temperature. (Do not roast for a Raw diet.)**
TRIM the figs, removing the wooden stem, and chop into smaller pieces.
REMOVE stones from the dates and chop into smaller pieces.
MOISTEN the dates if they are dry by adding 1-2 tbsp hot water after chopping.
SOAK the dates for 20 minutes and then remove any excess water.
PROCESS the figs, dates and lemon zest, in a food processor, for several seconds until they clump together.
ADD the roasted almonds and turn the machine on and off several times for a couple of seconds. (Ensure the nuts do not become too fine so the log has the varied texture of both the fruit and nuts.)
REMOVE the mix from the processor and bind using your hands. (Dampen your hands with a little water to minimise the fruit sticking to your fingers.)
ROLL into a log, about 4 cm/1 1/2 inch in diameter. (Alternatively take one tablespoon of the mix and roll it into a ball. Roll this in cocoa, cacoa, coconut or ground almond. Repeat.)
WRAP the log in parchment and chill.
SLICE as needed.
