Fish in Chermoula

Grilled fish with the gentle spice mix of northern Africa that is suitable for Diabetic, Dairy Free and Paleo diets.

Chermoula is an Arabic word referring to a marinade that is often used for fish and seafood but that also compliments meat and vegetables. It is a varied mix of herbs, spices, oils; lemon and onion is often added. The mix I have used here is delicate and suitable for many diets, with no onion or garlic. Vary this combination to your taste, the availability of fresh herbs and the type of fish.

Diets for which Fish in Chermoula is suitable:

Diabetic, Dairy Free, Fodmap, Gluten Free, Low Calorie, Low Fat, Nut Free and Paleo.

Preparation: 10 mins | Cooking: 3-5 mins | Serves: 2

2 fish fillets (serve size; 150-250gm each)
1 lemon, juice and grated rind
1 tsp cumin, ground
1 tsp coriander, ground
1 tsp paprika
1 tbsp olive oil
2 tbsp parsley, chopped

MIX the marinade ingredients (ie all ingredients except the fish) and combine in a food processor or pestle and mortar.
BASTE this mix onto the fish, cover and refrigerate for a minimum of 2 hours.
PRE-HEAT the grill.
COOK the fish for 3-5 minutes. It will be cooked when the marinade is slightly browned and the fish becomes opaque white. (The time is dependent on the type of fish and heat. Do not over cook)

– Serve immediately.
– Good with green salad and lemon rice.
