Festive Crostini

Festive Crostini are a light and healthy canapé, their colours indicative of the festive season. The choice of the base makes them suitable for all diets including Gluten Free, Paleo, Raw and Vegan.

Crunchy, light and quick to prepare, these crostini have the flavours of Italian antipasto. While baguette is generally the base for these canapés, rice crackers and slices of cucumber are good alternatives.

Diabetic, Dairy Free, Egg Free, Fodmap, Gluten Free, Low Calorie, Low Fat, Nut Free, Paleo, Raw, Vegetarian, Vegan


Preparation: 10 mins | Cook: 5-10 mins | Serves: 4-6
1/2 baguette* (not Fodmap, Gluten Free, Paleo or Raw — see notes)
3 tbsp olive oil
2-3 ripe tomatoes, peeled and de-seeded
12 green olives, stoned and chopped
1 tbsp balsamic vinegar
1 orange, zest finely grated
2 tbsp chopped basil**
Salt and pepper, as necessary when tasted

To Garnish
chives, chopped (optional)
basil (optional)


CUT the baguette into thin slices.
BRUSH, lightly, both sides of each slice with olive oil.
GRILL lightly on both sides until golden brown; or bake at 200 C/400 F/Gas 6 for 5 minutes (you may need to turn).
CHOP the tomatoes finely and combine with the olives, remaining olive oil, vinegar, orange zest and basil.
SEASON with a little salt and pepper to your taste.
ARRANGE the toasts on a platter and top with the tomato mixture.

* Substitute with Gluten Free baguette or rice cracker for Gluten Free and Fodmap diets; for Paleo and Raw diet, replace baguette with cucumber slices.
