Cucumber and Avocado Soup

A light refreshing soup that is a meal in itself. It is suitable for many diets including Dairy Free, Raw and Vegan Diets.

The subtle flavours can be enhanced by the addition of a little harrisa or chopped green chilli. However, be cautious with the quantity unless you want a ‘hot’ soup.

Diets for which Cucumber and Avocado Soup is suitable:

Diabetic, Dairy Free, Gluten Free, Nut Free, Paleo, Raw, Vegetarian and Vegan.


Preparation: 10 mins | Serves: 2

1 cucumber
1 avocado, ripe
4 sprigs mint
1/2 cup water, chilled
1 lime, juiced
1/2 tsp salt
1 tsp cracked black pepper
1/2 tsp harrisa or 1 green chilli (optional)
8 ice cubes (to serve)


CUT cucumber in large chunks.
COMBINE cucumber, avocado, mint and water.
BLEND the mix until it is smooth (approx 2 mins).
ADD lime juice, salt and pepper.
TASTE and adjust seasoning as required. (Add harrisa or green chilli cautiously.)
ADD more water to thin the soup as required. (Do not add much water because when you serve the soup the ice cubes will melt and further thin it.)
CHILL if not serving immediately.


-Add ice cubes and a sprig of mint.
