Courgette Linguine Salad

A grain-free ‘pasta’ salad, fresh and light and suitable for Gluten Free, Paleo and Vegetarian diets.



With the help of a mandolin, or a good knife and a lot of patience, a courgette can take on the appearance of pasta. Even its texture is not dissimilar.

This dish can provide flavours similar to ratatouille when lightly roast tomatoes and peppers are added. However, it is just as tasty with many combinations of vegetables; so, select for colour and seasonal availability.

If the salad is to be a meal in itself, adjust the quantities accordingly…and particularly if you are not serving with bread.

Dairy Free, Diabetic, Fodmap, Gluten Free, Low Calorie, Low Fat, Nut Free, Paleo, Raw, Vegetarian and Vegan.

Ingredients

Preparation: 15 mins | Cooking: 15 mins| Serves: 2

150 gm (1 cup) tiny tomatoes
1 red pepper
80 gm (approx 16) green beans
2 small courgettes
1 tbsp tapenade
1/2 tbsp olive oil
1 tbsp lemon juice
1 tbsp capers
70 gm (2/3 cup) feta cheese (optional but not Dairy Free, Paleo, Raw, Vegan, see notes)*
50 gm (1/3 cup) walnuts (not Nut Free, see notes)**
12 basil leaves, torn
10 black olives (optional)
1/2 green chilli, finely chopped (optional)

Method

PREHEAT oven to 180 C/350 F/Gas 4 if you are roasting the tomatoes and/or pepper.***
ROAST tomatoes and pepper for approximately 15 minutes.
COOL the tomatoes and pepper.
SLICE the tomatoes in half and thinly slice the pepper into ribbons.
STEAM the green beans over boiling water for 3 minutes.
COOL beans under cold water.
CUT the courgettes into fine ribbons so it appears like pasta. (Use a mandolin or similar devise for the best visual effect.)
MIX tapenade, lemon juice and oil.
RINSE capers and chop.
ASSEMBLE (in a large-ish salad bowl) all the vegetables, tapenade mix, capers, crumbled feta, broken walnuts and torn basil leaves.
TOSS lightly.

Serve

– A light meal, with or without bread.

Notes

* Replace Feta with grilled Halloumi cheese or for Dairy Free, and Vegan diets, marinated and grilled tofu.
** Substitute walnuts with toasted sunflower or pumpkin seeds for Nut Free diet.
*** Do not cook tomatoes for Raw diet.
