Chocolate Mousse

A light chocolate mousse with no dairy or soya, which makes it suitable for Dairy Free and Fodmap diets.



This mousse is one of those recipes that I have had in my ‘repertoire’ for years. With no added cream or butter, it is a light mousse and a healthier choice than so many desserts.

It has no added sugar, relying on the sugar of the chocolate only as sweetener. Try it as an accompaniment to fruit.

Ensure you select high quality chocolate, or make your own. Adding a little liqueur to the mousse will intensify the chocolate flavour.

Diets for which Chocolate Mousse is suitable:

Dairy Free, Diabetic, Fodmap, Gluten Free, Nut Free, Paleo and Vegetarian.

Ingredients

Preparation: 10 mins | Cooking: 10 mins | Serves: 4

220 gm (8 oz)dark chocolate*
150 ml (1/2 cup + 1tbsp or 5 fl oz) water
1 tbsp rum or other spirit (optional)
5 eggs, separated

Method

MIX chocolate and water in a bowl and place over the simmering water.
MELT the chocolate, stirring regularly to create a smooth paste.
COOL.
ADD egg yolks and liqueur to the slightly cooled chocolate mix.
WHISK the egg whites.
FOLD the egg whites through the chocolate mix.
BEAT the chocolate mix by hand for 5-10 minutes until it is smooth and shiny.
POUR into 4 small ramekins, or similar, and refrigerate for a minimum of 2 hours before serving. (It will have the soft and firm consistency of crême brulée.)

Serve

– Decorate as desired.
– Good served with fruit.
