Chocolate Cake

The best and simplest flourless chocolate cake I know for Fodmap, Gluten Free and Vegetarian diets.

This recipe came from my aunt Ellen. She was a fabulous cook and introduced the family to this flourless chocolate cake in the 70s. This was when a chocolate cake was a rare treat and this cake still is.

It is a simple, rich cake with just 5 ingredients and I have never had it fail. I hope it is the same for you.

Diets for which Chocolate Cake is suitable:

Fodmap, Guten Free and Vegetarian.

Ingredients

Preparation: 20 mins | Cooking: 25 mins | Serves: 10

120 gm (4oz) dark chocolate
120 gm (1 stick) butter +extra for greasing cake tin (not Dairy Free, see notes)*
120 gm (4 oz or 1/2 cup + 1 tbsp) castor sugar (extra for dusting cake tin)
120 gm (4 oz or 2/3 cup +1 tbsp) ground almonds**
4 eggs

Method

HEAT oven to 180 C/ 350 F/Gas 4.
BUTTER a 25cm (10 inch) round cake tin and dust in sugar.
MELT the chocolate in a bowl over a pan of simmering water.
CREAM the butter and sugar.
SEPARATE the eggs.
MIX the egg yolks into the butter one at a time.
COOL the chocolate a little and add, with the almonds, to the butter mix.
WHISK the egg whites.
FOLD half the egg whites into the cake mix, then the remaining.
GENTLY spoon into the cake tin.
BAKE for approximately 25 minutes. When cooked the cake will part from the wall of the cake tin a little and will be firm to the touch.
COOL for a few minutes in the tin before turning out.

– Requires no recommendations! Good with everything.

Notes

* Substitute butter for dairy free margarine.
* For Fodmap diets walnuts are a good substitute if almonds are not tolerated.
