Chocolate Brownies

A chocolate brownie that can be enjoyed as part of many ‘free from’ diets.

We all need to have a chocolate brownie recipe that we can quickly throw together, using ingredients in the cupboard. This is such a recipe. It has a very rich chocolate flavour, while being light in texture.

You can add various flavours; here, I have added walnuts (which are not suitable for Nut Free). Try it plain or with raisins or coconut.

Diets for which Chocolate Brownies are suitable:

Dairy Free, Fodmap, Gluten Free, Nut Free and Vegetarian.


Preparation: 20 mins | Cooking: 30 mins | Serves: 8+

120 gm (4oz) coconut oil*
100 gm (3 1/2 oz) dark chocolate**
180 gm (3/4 cup)castor sugar
2 eggs
1 tsp vanilla essence
60 gm (1/3 cup + 1/2 tbsp) rice flour***
60 gm (1/2 cup) cocoa
1 tsp baking powder, Gluten Free****
1/2 tsp salt
2 tbsp expresso coffee
50 gm (1/3 cup) walnuts (optional)*****


HEAT oven 160 C/325 F/Gas 3.
GREASE and line baking tin 19 x 32 cm (7 1/2 x 12 1/2 inches).
MELT coconut oil and chocolate in a bowl over a saucepan of simmering water.
REMOVE the bowl from the heat and cool a little.
BEAT sugar, eggs and vanilla essence with a hand beater until pale, thick and creamy (about 5 minutes).
ADD the chocolate mix to the egg and sugar, continually beating until smooth and well mixed.
SIFT together the rice flour, cocoa, baking powder and salt.
FOLD the flour mix into the chocolate.
ADD the coffee and other flavourings.
SPOON into the baking tin.
BAKE for approximately 30 minutes. (It will be soft under the crust and may not look cooked; but remove from oven and cool in the tin for 1 hour. It will continue to cook and become firmer, while being fudge-like in texture. If baked for too long it will be dry.)
SLICE and dust with cocoa.


– Warm with ice cream, cream or raspberry coulis as dessert.
– A delicious snack with coffee.


* Substitute with butter (not for Dairy Free although usually acceptable for lactose intolerant and Fodmap diets).
** Dairy Free and Gluten Free chocolate or make your own.
*** Rice flour can be replaced with a commercial Gluten Free flour, though the muffins will not be as light.
**** Regular baking powder if not Gluten Free.
***** No nuts for a Nut Free diet. Replace with coconut or dried fruit.
