Caramel Macaroon

A high energy snack and a sweet treat for Dairy Free, Paleo, Raw and Vegan diets.

These ‘macaroons’ requiring no baking and have no added fats, all the fat being that of the almonds and coconut. They are the ultimate sweet treat for an energetic person.

Dairy Free, Diabetic, Gluten Free, Paleo, Raw, Vegan and Vegetarian.


Preparation: 20 mins (+soaking time for dates) | Serves: 18 +

1 1/2 cups coconut, desiccated
1/2 cup almond meal
3/4 cup dates


SOAK the dates in water for 10-30 minutes depending on how dry they are (the skins need to be soft to process to a smooth texture, although the dates should not be so soft that they fall apart).
DRAIN all the water off the dates.
BLEND the coconut in a food processor to the texture of a course flour.
MIX the coconut, drained dates and almond meal.
BLEND ingredients for approximately 2 minutes. The mix will clump together.
SPOON approximately 1 teaspoon of the mix into the palm of your hand and shape into a ball.
PLACE on a tray and slightly flatten the ball with a fork so it becomes the shape of a macaroon.
REPEAT, shaping the macaroons.


– Store refrigerated in an airtight container for a few days until required.
