Blueberries with Greens

A salad full of the flavours of summer, with variations making it suitable for most diets, including Diabetic, Fodmap, Gluten Free and Low Calorie.

Mix your own combination of greens, fruit, nuts and cheese for this tasty salad. It is quick to prepare and, although you may be using odd remnants in the refrigerator, its appearance is that of a special dish.

For Dairy Free, Paleo, Raw and Vegan diets do not add cheese. Avoid the almonds for all Nut Free diets, they are usually managed by Fodmap diets in the small numbers as there are here (alternatively use walnuts).

Diets for which Blueberries with Greens are suitable:

Diabetic, Fodmap, Gluten Free, Low Calorie, Low Fat and Vegetarian.


Preparation: 10 mins | Serves: 2

100 gm (2/3 cup) blueberries*
20 gm (2 tbsp) almonds*
30 gm (1 oz) blue cheese
1 tbsp chives, chopped**
1 small bunch watercress*
vinaigrette (optional)


WASH berries and salad greens.
PLATE the greens and top with other ingredients.
DRIZZLE over vinaigrette if used.


– Starter or a light meal.


* Substitute with strawberries, peaches (not Fodmap diet), nectarines (not Fodmap diet), cashews (not Fodmap diet), walnuts, any green salad mix and celery for tasty variations utilising seasonal ingredients.
** Substitute with spring onions (not for Fodmap diet).
