Berry Tofu Cream

A tasty cream substitute or mousse that is suitable for Dairy Free, Raw and Vegan diets.

The base ingredient of this flavoured and sweetened cream is tofu. I have used strawberries, although any berry is suitable. In cooler months, use other fruits such as soaked dates, pureed pear or mango.

Diets for which Berry Tofu Cream is suitable:

Dairy Free, Diabetic, Fodmap, gluten Free, Low Calorie, Low Fat, Nut Free, Raw, Vegetarian and Vegan.


Preparation: 10 mins | Serves: 2 cups

200gm (1 cup) tofu
2 tbsp maple syrup*
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
1 cup strawberries**


WASH and dry the berries.
COMBINE all ingredients and blend until smooth (adjusting the quantity of syrup dependant on the fruit and your taste).
REFRIGERATE the cream for later use.


– Dip for fresh fruit.
– Cream substitute.
– Mousse style dessert.


* Adjust syrup quantity to taste and substitute with agave syrup, honey or artificial sweetener such as Stevia for Diabetic and Low Calorie diets.
** Use any berries or other fruit. Lime juice and rind are particularly good blended with blackberries.
