Avocado and Edamame Dip

A high protein dip suitable for Dairy Free, Raw and Vegan diets.

A nutritious twist on the avocado dip, guacamole. Here, the edamame beans provide protein and, being low fat, their inclusion in an avocado dip makes it no longer a calorie extravaganza; and it is also a satisfying sandwich filler.

Add your own variations. I have enjoyed it with tomatoes, chilli, spices such as paprika and sumac and with spring onion.

Dairy Free, Diabetic, Gluten Free, Nut Free, Raw, Vegetarian and Vegan.


Preparation: 10 mins | Serves: 1 cup

3/4 cup edamame beans*
1/2 avocado
1/2 tsp cracked black pepper
1/2 tsp salt
1 lime, juiced
2 tomatoes (optional)
1 green chilli (optional)
1 tsp paprika or Sumac (optional)
2 spring onions, finely chopped (optional)


PUREE the beans (to a fine or mixed texture, as you desire).
MIX the beans with the avocado.
ADD the lemon juice, salt and pepper to your taste. (Add other ingredients as you wish.)
STORE in the refrigerator in an airtight container until use.


– Dip or the protein of a light meal with salad and bread.


* Fresh or thawed, frozen edamame beans (young soya beans).
