Asparagus with Orange

A delicious treat to herald the spring.

Asparagus is simple to prepare and in this recipe the subtle flavour is enhanced with a little orange and mustard. Cook the asparagus for minimal time so it retains texture and colour.

Dairy Free, Diabetic, Gluten Free, Low Calorie, Low Fat, Paleo, Raw, Vegan and Vegetarian.


Preparation: 10 mins | Cooking: 5 mins | Serves: 2

150 gm asparagus (15 thin spears)
2 tbsp orange juice
1/4 tsp mustard powder
2 tsp poppy seeds
1 tsp maple syrup*
1/4 tsp salt
2 tsp olive oil


TRIM the asparagus. To ensure you remove all of the woody end, bend the asparagus at the lower end – it will naturally snap off – and discard the thick lower end of the asparagus spear.
BOIL the water.**
STEAM the asparagus for approximately 2 minutes depending on the size of the stalks, ensuring that it remains ‘al dente’.

REFRESH under cold water to stop them cooking.
MIX the orange juice, mustard, maple syrup, salt, oil and 1/2 the poppy seeds.
PLATE the asparagus, drizzle over the dressing and sprinkle in the remaining poppy seeds.


– As a starter with crusty bread or to accompany other vegetables.


* Substitute honey for non Vegan diet.
** For Raw diet do not cook the asparagus.
